Typical Apulian

The Apulian tarallo, has numerous variations, depending on the area of production.

It is mainly a ring of unleavened dough baked in the oven.

The basic dough consists of flour, water or wine, oil and salt to which are sometimes added flavouring ingredients such as fennel seeds.

There are several variations: plain taralli, black taralli with vincotto, sugar taralli, chocolate taralli, egg-white taralli, pizzaiola taralli, fennel seed taralli, capocollo taralli, onion taralli, chilli taralli, potato and rosemary taralli, burnt wheat taralli.
